Crocuses are among the very first flowers of spring, often pushing up through melting snow, and they open in sunshine and close at night or under cloud. The autumn-flowering saffron crocus, Crocus sativus, carries three red stigmas that are dried to make saffron; because every thread is picked by hand and each flower gives so little, it is one of the world's most expensive spices.
