Dried kochia stems are springy and tough, and people really did tie them into brooms, which gave it the names broom plant and summer cypress. In Akita, Japan, the seeds are processed into tonburi, nicknamed field caviar for their popping texture. Every October at Hitachi Seaside Park in Ibaraki, a whole hillside of kochia turns red at once.
